How much to charge for catering a tray of egg rolls?

Thinking about catering trays of 100 vietnamese egg rolls along with lettuce, herbs, and dipping sauces. Egg rolls are good size about 3 in with lots of real meat and shrimp filling. I want to charge around $60 for a 100 piece tray? Is that a good price?

2. I think you're undercutting yourself. Add up every single ingredient, including garnishes. You have to do some cost-crunching, like figuring out what 1 green onion is worth, 1/2 cup of soy sauce, etc. When you get a total, add at least 25% for your labor and a little profit.
